Too many words and too little internet. The past few days have been beyond amazing! I have so many videos and pictures to share w you guys when I get back!

I made these pancakes last weekend n forgot to post the pictures. I usually compost my juice pulp but this time I searched for other uses and found this flourless pancake recipe.

My life for the next two weeks =D Backpacking from Cancun to Tuxtla Gutierrez, Chiapas. I have to narrow down those products into 2 small bags.
Happy Thursday! Gah, I’m exhausted! I’ve been averaging 6 hours of sleep all week, staying up researching/booking stuff for my trip. I still have some things to do today but I think I’ll be all set by tonight. Anywho, I made some delicious lemon bars last night. They’re super easy to make and taste so, so good (if you’re obsessed w lemons like I am!).
Greek Yogurt Crème Brûlée
I can’t even attempt to pick a favorite dessert anymore. For a long time, I thought my favorite creation was a pumpkin-maple buckwheat bread until I made blueberry gelato. This dessert has taken the crown- the slight tartness of yogurt, the sweet flavor of coconut sugar and vanilla, and the smooth, creamy texture coming from the egg yolks. It reminds me vaguely of Yoplait ‘Whips’ yogurt but a trillion times better. If Greek yogurt and flan had a wild night in Vegas, this may be the result. No complaints. Let me know if you try this recipe!

Notes: I used less sugar than the original recipe, and I also didn’t have a torch laying around my kitchen so I sprinkled turbinado sugar on top with a bit of cinnamon. I did try melting the sugar with a lighter even though I knew it wouldn’t work :P

My sweet coworker just left this on my desk. Costco chocolate muffin- 690 calories, 48g of sugar, 38g of fat and 79g of carbs. I’m not going to eat it, but I don’t know what to do with it.
Breakfast. Sautéed kale, spinach, onions, mushrooms, and jalapenos scrambled with an egg and egg whites.
This plate started with honest intentions of being breaded spinach-mushroom cakes but my bed called me for a date. While making greek yogurt crème brulee (post later), I broke 2 egg yolks and had left over egg whites so I thought I’d mix them w/sautéed veggies and form patties. I made bread crumbs by processing 2 slices of Ezekiel Original bread but by then I was sleepy so I called it a night. I’ll use the bread crumbs on baked salmon tonight.

I made my own LÄRABARs last night! Last year, I made similar bars for long hikes and plan making some more for this weekend. I made Chocolate Coconut Chew flavor by processing soaked dates, almonds, walnuts, unsweetened coconut flakes and unsweetened cocoa powder. I used 8 dates, about 1/2c almonds, 1/3 pecans, 3/4c coconut flakes, and 2tsp cocoa powder. You can play with the amounts.
And for fun (nerd alert), I number crunched how much these cost compared to the real deal. A LÄRABAR costs anywhere between $1.25-1.79 (prices I’ve seen). This recipe made 11.5oz, or ~6.38 LÄRABARs (they’re each 1.8oz). This batch would cost anywhere from $8-12 in stores OR roughly $4.50 if you made them yourself.
The next flavors I’ll be making will be Lemon Bar, Blueberry Muffin, Pecan Pie, and hopefully Peanut Butter & Jelly.
The hot mess above is oat-less oatmeal. This was my first time trying this and I must say it’s pretty good!
